A mess of pottage
Dec. 12th, 2007 09:28 pmFinally, a lentil experiment I was happy with.
Half a white onion, a couple of cloves of garlic, two Roma tomatoes, one carrot, half a large red pepper, half a dozen mushrooms, 3/4 cup lentils, one can Campbell's condensed tomato soup and a can-and-a-half of water, plus generous sprinkles of powdered paprika and oregano and dried tarragon. I cut the onion and garlic small (the garlic press was in the wash) and pre-fried them in a little oil, then added the rest of the veggies, diced, the washed lentils, and the soup, mixed it all well, brought to the boil, and simmered for about half an hour, stirring occasionally to discourage sticking, at the end of which it was still fairly gloppy. Divided the result into three, ate one portion with a Mexican gray squash and the rest of the red pepper, steamed, and froze the rest in two single-serve containers.
