Two slices of eggplant, about 1cm thick and 3in across. About a quarter-cup of frozen mixed berries. One medium banana, sliced. Three teaspoons of sugar. A dribble of water. (What? I'm British, in my forties, and living in America. I use whatever units come handy.) Microwaved in my smaller casserole dish for four minutes -- which pretty much mushed the bananas and berries, and let the eggplant get tender and soak up the juices. Serves two, or in my case one with leftovers for tomorrow. Could have used some whipped cream for added decadence, or maybe vanilla ice cream, but ... yum.
The only trouble is, all this cookery goes through utensils at an alarming rate, though I haven't quite got to the stage of dirtying everything in the kitchen cabinets for one meal.
