More culinary jottings: chicken casserole

Disclaimer: I am not a cook and this is not a recipe; I'm just experimenting here. Also, this is nothing to do with tomorrow's holiday; my contribution to that, as per usual, is a bottle of wine and a pie from my grocery-store's bakery.
Thawed out a plateful of frozen chicken bits
Sliced and diced: one long skinny carrot, half a dozen mushrooms, a rather old zucchini, about half an eggplant, half a large green pepper, and the good bits of a somewhat battered onion. (Call it about a cup of each.)
Heated one can Campbell's Cream of Mushroom soup.
Diced the chicken (ugh!) Stir-fried it with the onion until it was done on the outside.
Poured the soup over the veggies in the casserole dish, added the chicken and onion, stuck the whole thing in theonion oven for 70 min, adding an 8oz can of whole kernel corn for the last quarter-hour.
Makes 4 servings, three of which are in the freezer for future reference.
Notes; next time, I'll add some garlic and pepper, maybe oregano. Also, for these particular veggies, that may have been too long a cooking time, though the chicken was about right. Not terribly happy with that bag of chicken bits -- too much water and fat. I wonder if I could cope with roasting a whole chicken and freezing it myself?
